Villawood Detention Centre


Universal Foodservice Designs has assisted in the development of the temporary production kitchen for the Villawood Detention Centre at Villwood in New South Wales. The builder was Vantage Corp http://www.vantagecorp.com.au/ whilst Hospitality Depot fitted out the factility with the specified foodservice equipment http://www.hospitalitydepot.com.au/

This kitchen is to cater to the nutrional needs of 800 refugees on a daily basis. More importantly is the facilities ability to cope with the cultural and religious differences in the facilities enclosed community.

At the end of the project the foodservice operation met all current Australian Standards regarding the construction of a foodservice operation. Additionally Safe food processes and HACCP best practices were incorporated into the facility.

Flexsil-lids taking Australian foodservice operations to a new level of freshness

Recently, Universal Foodservice Designs directors Brian Lennox FCSI & Phyllis Melides attended the FHA2012 Trade show in Singapore.

One of the most amazing items they investigated was the new Flexsil-lids.

These silicone lids are designed to fit onto EN631 Gn pans and provide the operator with some amazing advantages in foodservice operations including;

- Are air tight and water tight. Ideal for moving Gn pans and avoiding spillage and maintaining product freshness
- No sharp and unsafe edges, meaning they are excellent for work safe practices
- Can be provided in a multiple array of colours - ideal for identifying food types and product
- Can be washed & sanitized through a dishwasher upwards of 2000 times
- Dramically reduce the amound of disposable wrapping material used in a kitchen, saving operational costs
- Can be frozen to -40C or be used in an oven to upwards of 220C/428F during cooking processes.

P&O 'Pacific Sun' Foodservice facts

Here are some interesting facts on the foodservice operations on the P&O vessel ‘Pacific Sun’

The Pacific Sun foodservice kitchen staff working on the 45,000 tone cruise liner on a typical 10 day cruise total 72 persons including Sous Chef’s, first cooks, second cooks, third cooks, bakers, crew chefs and pastry chefs. Also front of house staff total over 120 persons.

A typical 10 tray cruise requires 90 tones (180 pallets) of food stores.

The Pacific Sun has an in house team of food safety supervisors that works to ensure that the food is stored, delivered, prepared cooked and delivered to the table in an approved food safe manner.





New Projects

Universal Foodservice Designs is pleased to announce that it has been selected to be part of the design team for a number of new projects including;

- The redevelopment of a Club kitchen in the ACT
- The design and development of an On premise laundry, dirty utility spaces and foodservice areas for a new aged care development on the Mid North Coast of NSW.
- A 200 seat restaurant and bar in Melbourne.
